Making raspberry sorbet in Flavigny

Ahh....   Raspberries. Framboises. Yes!

First thing this morning, we went out to pick raspberries in the garden.




Then, in the kitchen, Jean put the raspberries through a machine to extract the juice and separate out the seeds. No one wants seedy sorbet.


Jean weighed the juice using the scale below:


Then, based on the weight of the juice, he calculated the amount of sugar and water he'd need to make a simple syrup. He weighed the sugar on that same scale, mixed it with water, and brought it to the boil in a pot on the stove. Note: Boil the water and sugar for 3 minutes.

 

When the syrup had cooled a bit, Jean added the raspberry juice to the syrup.


He stirred it well and put it in the refrigerator to cool. It took HOURS to get sufficiently cool.


Finally, the juice and syrup mixture was cool enough. Jean poured it into his sorbet machine.


Half an hour later, when we had just finished dinner, out came the sorbet.


This was the silkiest, most delicious sorbet I have ever tasted. Oh, my. 

Did it need more sugar, Jean wondered?  NO!  It was perfect!


Ha ha! I just took another look at the photo above. It looks like Jean has a cloud of curly hair behind him. A hair extension? Ha ha! It's the lavender plant!
